Banana Waffles

Ingredients

2 cups all-purpose flour

1 teaspoon salt

4 teaspoons baking powder

2 tablespoons local honey

2 large eggs

1 ½ cups warm milk

cup butter, melted

1 teaspoon vanilla extract

1 over ripe banana (mashed)

1 bottle Wisconsin maple syrup

1 tablespoon cinnamon

Directions

  1. Gather all ingredients.
  2. Mix flour, salt, cinnamon, and baking powder together in a large bowl; set aside. Preheat waffle iron to desired temperature.
  3. Beat eggs in a separate bowl and then stir in milk, butter, banana, honey, and vanilla.
  4. Mix the egg mixture until completely combined.
  5. Pour egg mixture into flour mixture and beat until blended.
  6. Ladle batter into a preheated waffle iron.
  7. Cook waffles until golden and crisp.
  8. Serve immediately

Notes

You can make the batter ahead of time and cook the waffles just before serving. Cover the batter and refrigerate overnight or up to 3 days. Whisk well before using.

Freeze any extra waffles in freezer and reheat in toaster.
